With the temperature dropping, warm meals are definitely becoming a daily thing. Although I enjoy oatmeal all year around, cold winter mornings make it so much more enjoyable. Plus, the zucchini and egg whites make oatmeal so voluminous!
-1/2 cup old fashion oats
-1 cup shredded zucchini
-2 tablespoons egg whites/egg substitute
-1 cup water
Start by adding dry oats to a medium sized bowl. Then, add the shredded zucchini on top of the oats and pour in the water.
Stir in egg whites. Make sure to blend zucchini and oats together.
Microwave in 30 second intervals for a total of three times, stirring between each interval. Keep an eye out and beware of overflowing.
