A new favorite of mine is bell peppers. Not just cut up and added to omelettes or dipped in hummus for a snack, I’ve been loving using bell peppers as mini bowls.
Bell peppers are great because they baked well and you can eat the bowl!
Here is what you will need:
-1 bell pepper
1. Preheat oven to 350 degrees Fahrenheit
2. Cut bell pepper in half. Try to make this cut as even as possible.
5. Bake for 25-30 minutes. An easy way to check if it’s done is to gently tap the yolk. If it’s firm enough, then it is cooked. Also, check the surrounding egg whites and make sure those are cooked too. They should be white (not clear).
