Chocolate Pumpkin Cookies


Although I wish I could take credit for this delicious treat, Kim Hoeltje (@kimhoeltje) is the one to thank. She has so many delicious, macro friendly recipes on her blog, but this one is my favorite.

Here is what you will need:
-1/2 scoop protein powder
-1/2 cup canned pumpkin
-2 tablespoons coconut flour
-1 tablespoon egg substitute
-1 teaspoon cocoa powder
-1/2 teaspoon baking powder
-3 packets stevia
-1 tablespoon white chocolate chips

1. Preheat oven to 325

2. Mix everything together

3. Add water until everything is combined (batter should not be runny)

4. Roll into balls and place on non stick cookie sheet. I use an cookie dough scooper and I absolutely love it. Saves so much time and it is mess free!

5. Bake for 20 minutes
