Lemon Blueberry Protein Cake

…and the summer baking continues. Don’t worry! I baked quite a bit over the summer, so I have plenty of recipes blog posts stockpiled to last me a while since recipe testing in a dorm room is a bit problematic. This recipe is modified from @twinsanityfitness’s post on Instagram.

Here is what you will need:
-50 grams @birchbenders protein pancake mix
-90 grams canned pumpkin
-15 grams vanilla protein powder
-30 grams blueberries
-1/2 teaspoon cinnamon
-1/2 squeezed lemon
-1/2 teaspoon baking powder
-1/2 teaspoon baking soda
25-30 grams water

1. Preheat oven to 350 degrees Fahrenheit

2. Set aside a few blueberries

3. Combine everything in a small bowl; water amount varies so add gradually until everything is combined

4. Pour batter into greased ramekin

5. Add remaining blueberries on top

6. Bake for 25-30 minutes

Makes one 4-inch ramekin
