Chocolate Chip Mini Muffin Puffs

Recipe time! This time I adapted @theflexibledietinglifestyle’s hulk brownies into chocolate chip mini muffin puffs. These little melt-in-your-mouth bites are pure goodness, and if that wasn’t enough, each puff comes out to roughly 30 calories a piece at 1F/2C/4P depending on the brands of ingredients you have on hand.

Here is what you’ll need:
-30 grams vanilla protein powder
-15 grams powdered peanut butter
-10 grams coconut flour
-2 grams baking powder
-1 whole egg
-100 grams shredded zucchini/yellow squash
-45 milliliters cashew milk
-15 grams mini chocolate chips

1. Preheat oven to 350 degrees Fahrenheit

2. Combine zucchini, egg and milk in food processor

3. Combine dry ingredients in a separate bowl (using about half of the chocolate chips)

4. Add wet mixture to dry mixture and mix until everything is combined

5. Pour batter evenly into mini muffin pan

6. Sprinkle remaining chocolate chips on top

7. Bake for 9-10 minutes

Recipe makes 12 mini bites
