Pumpkin Quinoa Cakes

Still have some leftover pumpkin? Then this recipe is calling your name!

Here is what you will need:
-1 cup canned pumpkin
-1 1/2 cups quinoa (cooked)
-1/2 cup sautéed onions
-1 teaspoon red pepper flakes
-1 teaspoon salt
-1 tablespoon fresh chopped thyme
-1/2 cup breadcrumbs

1. Combine all ingredients in a bowl

2. Separate into 1/4 cup patties

3. Sear patties for 3 minutes on each sides in oil

Makes: 15 patties
