Lemon Energy Balls

Time for another energy ball recipe. I really love this one because they keep well in the freezer so I can make them to store as a “just in case” kind of snack without feeling the need to eat the entire batch right away.

I also love this recipe because it only used four simple ingredients! So without further ado…lemon cashew energy balls.

Here is what you will need:
-6-8 (115 grams) pitted dates
-3/4 cup (115 grams) cashews
-1/2 lemon
-2 tablespoons maple syrup

1. In a food processor, pulse dates until a sticky ball forms

2. Add cashews, juice from half a lemon, and maple syrup and blend until combined

3. Refrigerate for 15-30 minutes

4. Remove dough from fridge and roll into bite-sized balls


*Store balls in freezer for up to 2 months
