Recipe time! This time I adapted @theflexibledietinglifestyle’s hulk brownies into chocolate chip mini muffin puffs. These little melt-in-your-mouth bites are pure goodness, and if that wasn’t enough, each puff comes out to roughly 30 calories a piece at 1F/2C/4P depending on the brands of ingredients you have on hand.
Status Update: It’s my birthday weekend and even though I’m low key wishing I could celebrate with a new @mason_woodruff recipe, reality is I am probably spending yet again more money to fund another Nashville foodie adventure. I am not complaining though.
Today’s full day of eating is a throwback to some summer eats because at the moment I am unpacking box after box into my home for the next few months.
Summer means baking season is in full swing. Credit to @mason_woodruff for these s’mores protein cookie balls.
S’mores Protein Cookie Balls
☑️heaping 3/4 cup (91 grams) crushed graham crackers
☑️1 1/2 scoop (48 grams) snickerdoodle protein powder
☑️2 tablespoons (28 grams) butter
☑️3/8 cup (45 milliliters) maple syrup
☑️1 tablespoon (14 grams) mini chocolate chips
☑️6 mini marshmallows
1️⃣Preheat oven to 350 degrees Fahrenheit
2️⃣Combine crushed graham crackers, protein powder, butter and syrup into a large ball using your hands
3️⃣Break ball into 6 smaller balls and flatten
4️⃣In the center of each flatten ball, place two mini marshmallows and some mini chocolate chips
5️⃣Fold dough around chocolate chips and marshmallows to form a ball
*spray hands with nonstick spray to prevent dough from sticking
6️⃣Refrigerate balls for 5-10 minutes
7️⃣Bake for 6 minutes and let cool
SERVINGS: 6 golf ball sized balls
