For my community nutrition class, my professor required us to volunteer with a nutrition-related organization. I decided to spend my time helping students with intellectual and developmental disabilities stay active and expand their cooking experience. . . . A few days a week I met with students to play racquetball, walk the track, and/or play basketball. I also helped with a cooking lab where they learned new cooking skills and tried news foods. Honestly, I do not think I every enjoyed volunteering as much as I did this semester. I loved getting to know all the students and seeing them around campus. What started as more mandatory volunteer hours turned into one of my highlights of the semester.
I decided to go to college 8 hours from home. It terrified me, but I also knew I needed to leave home. . . . I no longer wanted to be the friend that did not ordered anything at restaurants or avoided anything social because of the food. It was tough and I definitely struggled but slowly I started to get more comfortable with stepping out of my comfort zone. I found the most amazing and supportive group of friends that made late night milkshake runs and the dinning hall a lot less intimidating. It was just the fresh start I needed. #bliftsstory
Another family vacation: another test. . . . I had been doing pretty well in recovery and decided to test out the whole no-tracking thing. Long story short - it did not go over well. Even though I sat poolside all day, I underestimated how much I ate. I basically only had fruit for an entire week. . . . Before heading to the airport, all the girls in the family did a yoga class and I almost passed out mid-class. I felt so lightheaded and dizzy. I made it back to our hotel room and collapsed onto the couch in tears. At that point I was so dehydrated and under fueled. When we finally made it back home, I tried to dive back into my normal eating which only made me sick to my stomach. #bliftsstory

I stopped club gymnastics in June of 2016. . . . But here’s the thing: making friends as a high school junior is TOUGH. Everyone already had their friend groups and years of memories so I always felt like the odd one out. I also liked the freedom of going to the gym and making my own workouts but eventually grew tired and unmotivated. . . . At that point, it was too late to return to club so I joined my high school’s gymnastics team. The girls on the team did not have the same drive for gymnastics as me. I made the varsity team but never really fit in with the girls. The other girls went to parties every weekend and cared more about boys which was NOT my scene at all. . . . As the high school season ended I started exploring other opportunities and came across weightlifting. I had tried Crossfit the summer before and loved it - but all the gyms I visited were mainly older populations and expensive. . . . I went to brunch with one of my old gymnastics teammates and convinced her to try a weightlifting gym with me and long story short - we both transitioned from gymnastics to weightlifting.
Vegan Butternut Squash Mac & Cheese ☑️1/2 cups cashews (soaked overnight, drained) ☑️1 1/2 cups water ☑️1 cup cubed butternut squash ☑️3 tablespoons nutritional yeast ☑️2 cloves garlic ☑️1 tablespoon lemon juice ☑️1/2 teaspoon onion powder ☑️1/8 teaspoon nutmeg ☑️1 teaspoon dijon mustard ☑️pinch of cayenne pepper ☑️salt ☑️pepper ☑️8-ounces uncooked pasta ☑️1/4 cup pasta water 1️⃣Preheat oven to 400 degrees Fahrenheit 2️⃣Roast butternut squash for 25-30 minutes; turning halfway 3️⃣Cook pasta according to package; reserve pasta water and set aside 4️⃣Place cashews and water in food processor and blend until smooth 5️⃣Add butternut squash, nutritional yeast, garlic, lemon juice, onion powder, nutmeg, cayenne pepper, dijon mustard, salt, and pepper and blend until smooth 6️⃣Pour “cheese” sauce into a large pot and heat on low until sauce thickens slightly 7️⃣Add pasta and pasta water to sauce and mix 8️⃣Transfer mixture to an 8x8” glass pan 9️⃣Sprinkle with nutritional yeast and broil for a few minutes until top turns golden SERVINGS: 4 servings Recipe from @choosingchiq #bliftsrecipes
